A dish of Smoked Fish with Marinade

Ingredients

  • 1/3 c. brown sugar
  • 1/3 c. olive oil
  • 1/3 c. red wine vinegar
  • 1/2 medium onion or big shallot
  • 2 cloves garlic, minced
  • 1 small bunch thyme, stripped
  • 1 T. salt
  • 1 t. black pepper, ground
  • 1.5-2 lbs. salmon or trout

Directions

Mix together all ingredients except fish into a marinade. Marinate fish flesh side down for 45 minutes. Hot smoke fish on grill for 45 minutes. Place remaining marinade into saute pan and gently reduce for 5-7 minutes. Reduced marinade is excellent as a sauce for the cooked fish and as a salad dressing.
